Bamboo
Habitat for Humanity and various other housing assistance programs have turned to bamboo as their building material. It is used because it is generally cheap, fast to grow, and can be grown almost anywhere. It is durable, light-weight, and flexible.
I have also seen bamboo used in Peru. Many communities in the Andes are replacing their previous roofs with those made of lashed bamboo covered with tile. Very effective, and can be constructed in a single day.
